Update: Our plans changed as the weather became colder so we headed south from Lake Konstans/Bodensee and went to Slovenia and Croatia via Italy, then flew home from Venice. I’m not sorry we missed France, having been there before, and as it was there were more than enough restored medieval villages (way more than enough!) on the way, but they would have been even harder to avoid in France.
